KERALA AVIAL RECIPE

  • Drumsticks – 2
  • Carrot – 2
  • Brinjal – 3 small
  • Green beans – 15
  • Potato – 2
  • Raw plantain – 1
  • Onion – 1 medium
  • Green chilly – 10 (Slit open)
  • Curry leaves
  • Turmeric powder – ½ tsp
  • Salt
  • Coconut oil
  • To grind:
  • Grated coconut – 1 big
  • Green chilly – 3
  • Shallots – 1 big
  • Cumin seeds –½ tsp
  • Curd / Yogurt – 2 tbsp

To prepare aviyal first cut all vegetables lengthwise. wash it cleanly. Add plantain add vegetables and turmeric powder, some salt and mix this all well.
